There’s nothing better than making a delicious easy meal with very little effort involved. This slow cooker pork roast with garden vegetables is so good. Putting this crock-pot pork roast meal together is something you can do before you leave for work in the morning and when you come home, snap, it’s done. It has a nice sweet and savory taste from the combination of spices and juice that I added to the pork roast. The variety of vegetables in it blends well just adding depth to the already flavorful dish. When the roast is done it just falls apart it’s so tender and juicy.
A good cut of meat to use:
Pork shoulder is what I like to use because It has a little more fat in it that gives it more flavor. I know less fat is better for us but of course, that is what helps enhance the flavor. After cooking It in the slow cooker all day it comes out very tender and succulent. You could also use pork leg or tenderloin. Keep in mind when using a tenderloin cut it’s a leaner cut of pork so there would be less fat. I sometimes will add some extra broth with this for more moisture.
Vegetables that go well with this dish:
You can add any kind of vegetables you like in this dish and they would all be wonderful. I liked putting cabbage, onions, carrots, and peppers as the main vegetables in my pot roast. Just some other examples would be sweet potatoes, regular potatoes, and mushrooms are just a few examples. Almost any kind of vegetable you have in your refrigerator would work.
Things you can serve with this:
This slow cooker pork roast with vegetables is great with just the roasted vegetables, but mashed potatoes and gravy are also an all-time favorite. A nice side salad lightens the meal up with a good piece of bread. I love applesauce
with my pork so a small bowl on the side is amazing.

You’re also going to love the fact that it only takes a few minutes to put it together in the slow cooker, cover it and its done at the end of the day with no great effort.

Slow Cooker Pork Roast with Vegetables
This slow cooker pork roast with garden vegetables is a great weeknight meal. Throw it together in the morning before you go to work and dinner will be ready when you get home. Tender pork and a medley of vegetables cooked in juices that make a delicious sauce.
Ingredients
- 4 pound port roast ( about)
- 1 cup orange juice
- 1/2 cup applesauce
- 1 apple of your choice
- 1 medium onion
- 1/2 head of cabbage
- 6 small multi colored peppers
- 6 carrotsĀ
- 1 tablespoon minced garlic
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon coriander
Instructions
- Place the pork roast in a hot pan with some olive oil to brown on all sides,
- After it is browned place it in the slow cooker
- Sprinle the garlic, cumin, coriander, oregano salt and pepper to taste on top of the roast
- Add the orange juice, applesauce and cored appled into the pot
- Place all the vegetables on the top
- Cover it with the lid
- Turn the slow cooker on low and let cook for 6-8 hours
