Low Carb Egg Roll in a Bowl

I made this low carb egg roll in a bowl dish thinking that it might be kind of weird, but I surprised myself, its actually really good. I couldn’t imagine it being as good as a true egg roll, but in fact it’s better because there’s no grease dripping from it.  It has the same flavors a the an egg roll but much healthier for you. This egg roll in a bowl recipe is amazingly good.

I wanted to make it so that it has the same crunch as the original egg roll would have. So I put water chestnuts and bean sprouts in it. Adding these two ingredients added that extra crunch that it needed. It is so good. I’m quite proud of this dish.

Ingredients you’ll need:

  • Ground pork
  • Sesame seed oil
  • Soy sauce
  • Ginger
  • Garlic
  • Coleslaw in a bag
  • Green onion
  • Water chestnuts
  • Bean sprouts

Making this egg roll in a bowl:

Instead of using ground pork you could use ground turkey. That’s if you want to be really healthy, but the ground pork is lean with minimal fat. I simplified things by buying the coleslaw in a bag. So there is no chopping or dicing anything but the green onions and the water chestnuts. Simple and quick. 

I used grated fresh ginger that I had in the freezer, but you can use powder if that’s all you have. If you don’t have any ginger in the house it’s cheaper to buy fresh and then freeze it after you use what you need. It freezes well and then you’ll have it down the road for other recipes. I also used minced garlic from a jar but you could use fresh garlic or powdered garlic. Just use what you have in your spice cabinet.

The cost of this dish is probably less than 10 bucks and that’s if you used a whole pound of ground pork with most of the coleslaw.  I only used half a pound of ground pork with less than half a bag of coleslaw.  I’m telling you it’s a really inexpensive delicious dish to make.

Dressing to use:

  1. I made a dressing out of sriracha and an Asian Sauce called Kotteri Morin, mixed them together and then poured over the top.
  2. You can use a sweet chili dipping sauce that is served with egg rolls if you like.
  3. Then again, if you’re watching your carb intake you could also mix together vinegar, Sriracha and a little bit of sugar substitute for the dressing.  

This would be way healthier.  In reality, you don’t need to put anything on it because it’s delicious just the way it is.

I suggest you give this a try it’s amazingly delicious. If you like Asian Cuisine you’re really going to like this. I surprised myself on how wonderful it is. I could eat this every day.

This eggroll in a bowl is a great low carb alternative to the traditional egg roll. It is low in carbs, diabetic-friendly, and keto compliant.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1/2 pound ground pork
  • 1 cup pre made cole slaw
  •  1 cup bean sprouts
  • 1/2 a can of sliced water chestnuts
  • 1 tablespoon soy sauce (add more to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger
  • 1 teaspoon garlic
  • 1 green onion

Instructions

  1. Cook the pork until well done in a medium sauce pan with the
    sesame seed oil.
  2. Add the ginger, garlic and soy sauce to the meat mixture.
  3. Toss in the cup of coleslaw, water chestnuts and green onion
    sauteing until the coleslaw is tender.
  4. At the very end throw in the bean sprouts for that extra crunch.
