You really need to try this cauliflower potato salad if you like potato salad. This Keto potato salad made with cauliflower puts a nice twist on the traditional potato salad. If no one told you it was cauliflower you would never know the difference. Cauliflower in place of potatoes is a nice substitute for a low carb diet and is a great recipe for anyone who needs to watch their carb intake, like diabetics or just someone trying to lose weight for your health.

I have always made the traditional potato salad that my mother taught me. But I am always trying to watch my weight and my carb intake so I decided to try the cauliflower in place of the potatoes. To my disbelief, I could hardly tell the difference between the two. This is my new recipe for a mock potato salad that I have started making these days.

You can put anything that you would put in your traditional potato salad in it. I like to put dill and sweet pickles, with onion and celery in mine for the basics ingredients. I will sometimes add bacon cheese to add some surprise to the recipe. The dressing is always the same, I never change that up. It’s what makes the cauliflower potato salad.

This is a great summer dish you can serve at a BBQ, picnic or for a summer potluck. Oh heck, it’s good any time. This cauliflower salad goes great as a side dish with hamburgers, hot dogs, BBQ chicken or steak. I will make a big bowl of it and eat it for days.

Ingredients:

  • Cauliflower
  • Hard-boiled eggs
  • celery stalks
  • Onion
  • Dill pickles 
  • Mayo
  • Yellow mustard
  • Sweet relish optional
  • Honey mustard

Putting the Salad together:

You want to cook the cauliflower till its tender when forked. Chop up all the vegetables into small chunks. Toss everything in a large bowl. Mix the dressing ingredients in a separate bowl so that it is all mixed together well. Then add this mixture to the vegetables and mix until it’s coated well with the dressing. Add salt and pepper to taste. Put it in the refrigerator for at least 2 hours so it’s good and cold.

Cauliflower potato salad

This cauliflower potato salad is low in carbs and a healthy twist on traditional potato salad. Cauliflower replaces potatoes to make this salad diabetic friendly.

Ingredients

  • 1 head of Cauliflower, cut into bite-sized pieces
  • 10 hard-boiled eggs
  • 4 celery stalks
  • 1 small onion
  • 6 small dill pickles or three large

dressing:

  • 1 cup Mayo
  • 5 tablespoons yellow mustard
  • 2 tbsp sweet relish optional
  • 1 tbsp sweet honey mustard

Instructions

  1. Cook the cauliflower in the microwave for 5 minutes until tender.
  2. Finely chop the celery, onion, pickles and hard-boiled eggs then put it
    all in a large bowl with the cauliflower.
  3. Mix together the mayonnaise mustard and sweet
    relish. Pour the mixture into the chopped vegetables and mix
    thoroughly. Add salt and pepper to taste and a little Cayenne if you
    like a little Heat.
