This low carb lasagna with zucchini is so savory and full of flavor you won’t care if you ever have pasta in your lasagna again. All the cheese and spices in this zucchini lasagna makes everything really come together. You can serve this healthy zucchini lasagna dish to anyone that may not like zucchini and they will love it. You have to try it…..
Let’s make a list of what you will need:
- 4 small to medium zucchini
- Ricotta cheese
- Shredded mozzarella cheese
- Shredded parmesan cheese
- 1 egg
- Minced garlic
- Italian seasoning
- Salt and pepper
- Marinara sauce or meat sauce
Now Putting it together:
Making this crowd-pleasing zucchini lasagna is so easy to make. After slicing the zucchini with either with a vegetable peeler, a mandolin slicer or by hand with a knife the rest is easy. After that, you just have to layer it with the sauce and cheese. Using a can of marinara sauce works well, or make it from scratch, whichever is easiest and whatever you have the time for. The can sauce is good especially if you doctor it up with spices and meat if you like. I will sometimes start with a can of cheap sauce then add additional ingredients to make it my own.

Yes, in fact, it is better the second time around. The flavors all marry together and it becomes a little firmer.
Is meat good in it and what kind to use?
Yes, meat is good in it. You could use ground turkey to keep the fat down but ground beef or pork would also be good.

Of course, my favorite side for most dishes is a wonderful salad. It will lighten up the rich savory lasagna dish and is a bright addition to the plate for presentation.
You could also serve a nice slice of garlic bread if you’re not having to what your carb intake.
This zucchini lasagna dish is not carb-free, but it’s way better for you than pasta, particularly if you’re a diabetic and having to what your carb intake. Even someone on a keto diet can eat a certain amount of carbs and sometimes including carbs into your meal is not a bad thing if they’re the right kind of carbs.
