Slow Cooker Keto Italian Meatballs

Okay it’s time for an Italian night. So I’m making slow cooker low carb Italian meatballs that are keto and diabetic friendly.  I like to combine different kinds of meat to give it some depth to the meatballs flavor. Ground turkey. Italian pork with a lien beef burger is a great combination and inexpensive. The spices you use is also important to give it that zesty Italian meatball flavor. Placing them in a slow cooker also makes it easy. I love my slow cooker meals. These are low carb keto and diabetic friendly meatballs. 

Ingredients:

  • Ground beef
  • Ground turkey
  • Italian sausage
  • Eggs
  • Onion
  • Worcestershire sauce
  • Rosemary
  • Oregano
  • Basil
  • Garlic
  • Seasoning Salt
  • Pepper
  • Chili peppers (optional)

I also make a large batch so I can make more that one meal from the meat mixture. You might as well make lots while you’re making it to get a couple meals out of it, this way it saves a lot of time and money. You have to divide up the meat and add different spices to make other recipes. You can make Swedish meatballs or Saulsberry steak from this recipe.  Take the meat mixture and form them into round balls about the size of a golf ball.  Place the meatballs in the slow cooker around the outer edge so they cook evenly.  Add the sauce on top of the Italian meatballs in the slow cooker and cook for about 3 hours or until done. They will be firm when poked with a fork.

For the sauce I like to keep to keep it as easy as possible. I use a marinara sauce from a can and I doctor it up with some herbs. Sometimes I will add mushrooms, peppers and zucchini. but from there you can put whatever sounds good to you . The most important ingredients to use in the sauce are onion and garlic. From there you can put whatever other vegies in that sounds good to you.

Serving Suggestions:

They can be served alone or with:

  • Spaghetti squash
  • Cauliflower rice
  • Zucchini noodles
  • low carb noodles
  • or if our not watching out carbs a bed of spaghetti noodles 

You can serve them as an appetizer, side dish or main course. No matter how you serve them they’re going to be amazing. Especially when there good for you. the bottom line is the Italian meatballs and enjoying the full flavor of them.

Using the slow cooker for these keto meatballs makes preparing dinner easy breezy.  Preparing them doesn’t take much time either and the clean up is quick. Then on top of that when you make a large batch you can freeze some for a later date. Now you have a couple pre made meals that will literally take minutes to make.  

When you freeze the meat mixture you can do it a couple ways

  • Roll them into the balls and place them on a cookie sheet. Put them in the freezer so they freeze separately.  After they are froze place them in a freezer container and put them back into the freezer.
  • or divide the meat mixture into larger portions also placing it in a freezer bag to make what you want later.

Ingredients

  • 1 pound Ground pork
  • 1 pound Ground turkey
  • 1/2 pound  Italian sausage
  • 1/4 cup Onion
  • 2 Eggs
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Rosemary
  • 1 tablespoon Basil
  • 1 tablespoon Oregano
  • 1 tablespoon Garlic

Instructions

  1. Place all the meats in a large bowl with the eggs, minced onion, Worcestershire sauce and spices.
  2. Mix everything together
  3. Form into small balls about the size of a golf ball
  4. Arrange them around the outside of the slow cooker in layers
  5. Put onion and mushrooms in the center
  6. Cook them for about 3 hours or until firm when forked.
