I’m going to keep this Swedish meatball recipe as low on calories as possible, with no carbs. This is a really great recipe for diabetics, or for those of you that are doing the keto diet. I’m going to use sour cream and heavy cream to make a thick and creamy gravy. You can use plain yogurt and light sour cream if you like, which will be just as delightful. Really, it’s the spices in this recipe that gives the meatballs their unique flavor. There are so many ways to make these Swedish meatballs, but this one is good if you’re having to watch your diet.

I place the meatballs in the bottom of the slow cooker then layer them along the outside. Place the onions and mushrooms on the top of the meatballs, this will keep them from getting overcooked.  When the meatballs are done cooking you’ll have all the dripping in the bottom of the slow cooker. This will make the most delightful creamy gravy. then put the meatballs back into the slow cooker and coat them with this homemade gravy. It is so rich and creamy that it’s going to make your mouth water. I love the gravy, who doesn’t ???

You’re going to need:

  • Ground beef
  • Ground pork
  • Ground turkey
  • Italian sausage
  • Onion
  • Egg
  • Worcestershire sauce
  • Garlic
  • Allspice
  • Clove
  • Nutmeg
  • Mushrooms
  • beef broth
  • Sour cream
  • Heavy cream

Take all the ingredients, except for the last 3, and toss them in a large bowl. Mix them together really well and then form into balls, how easy is that. You have no cooking involved, the slow cooker does most of the work for you. It’s great!! In the end you have a delightful, cozy, comfort meal to serve your family. On top of that its also a pretty healthy dish. So gather all your ingredients and make these super yummy meatballs.

If you’re not watching your carb intake you can serve this over the top of :

  • Noodle (using the low carb noodles for diabetics is a really great option)
  • Rice
  • Potatoes

Now, this is an all-time winter favorite that you’re going to love and want to make over and over.  It’s easy to make, diabetic and keto-friendly with the most fabulous flavors you could ever want.  If you have to much then take the leftovers and put them in a container and freeze them for later.  You can also freeze these before you cook them.  I prefer to freeze them uncooked for a later date so I always make extra.  It’s nice sometimes to just open the freezer and pull them out.  No mess no stress.  Hope you enjoy them.

Keto Swedish Meatballs in Slow Cooker

Keto swedish meatballs in a slow cooker with onions and mushrroms

Prep Time 15 minutes
Cook Time 8 hours
Total Time 8 hours 15 minutes

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground turkey
  • 1/4 pound ground pork
  • 1/4 pound ground Italian sausage
  • 1/2 cup miniced onion
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp minced garlic
  • ½ teaspoon allspice
  • ¼ teaspoon clove
  • ¼ teaspoon nutmeg
  • 1 small onion
  • 8 mushroom buttons

Gravy

  • 1 cup beef broth
  • 1/2 cup sour cream or plain yogurt
  • 1/2 cup heavy whip cream
  • Salt and pepper to taste

Instructions

  1. Mix everything together except for the last two items in a large bowl.
  2. Form the meat into small balls about the size of a golf ball.
  3. Place the meatballs in the bottom of the slow cooker and then place a second layer around the outer edge of the slow cooker.
  4. Chop a small onion up with the mushrooms and place them in the center of the slow cooker on top of the meatballs.
  5. Cover and let cook for 8 hours on low.
  6. When you're ready to eat remove the meatballs and make the sauce.
  7. Add the broth to the drippings in the bottom of the slow cooker with the sour cream and heavy whip cream stirring until it becomes creamy.
  8. Place the meatballs back into the slow cooker tossing them in the gravy until they are well coated.
