I’m really into inexpensive quick meals. The prep time for this frittata with turkey sausage and fresh garden vegetables is less than 15 minutes. This is a recipe that you can add a variety of different things to make it your own.
The garden vegetables add a fabulous flavor to the sausage frittata as they all roast together as they cook. I also put cheese in it, which can be any kind you like. I prefer pepper jack or Swiss.
How to make Mini Frittatas with Turkey Sausage:
This is so easy! You toss all the ingredients in a bowl then pour the mixture into a muffin tin and throw it in the oven. I love the muffin tin for these mini frittatas. It makes such a convenient grab-and-go size.
You can eat these on the run! The cooking time is only 40 minutes and they’re done. They’re great to eat every day or to serve on special occasions or for a Sunday brunch
These mini frittatas are freezable!
You can also freeze them and have them at a later time if you choose. If you want to freeze them, make sure you let them cool down completely before placing them in an airtight, freezer-proof container.
When you are ready to eat them just grab one or two and place them in the microwave for about 1 to 2 minutes. Check them every 30 seconds so they don’t get overcooked. Microwaves are notorious for overdoing things.
Serving suggestions for these mini frittatas:
I like to put a little sriracha on the top just before serving these little gems. Sriracha adds a little kick to the frittata. It’s wonderful served with fruits, toast and a nice glass of orange juice.
When you serve them the presentation looks like you spent a long time making them when in reality, it really doesn’t take any time at all. It only takes 10 to 15 minutes to prep everything then the oven does all the work.

- 1⁄2 cup sour cream
- 2 cups fresh spinach chopped
- One small zucchini
- Three small multi-colored peppers
- 6 mushrooms
- 1⁄2 cup onion
- 1/2 cup cilantro
- Salt and pepper to taste

Healthy mini frittatas with turkey sausage and fresh garden veggies. These little frittatas are full of healthy protein and they are low in carbs. Such a great start to your morning!
Ingredients
- 8 eggs
- 1/2 pound of breakfast turkey sausage
- 1 cup cubed cheese of your choice, I like pepper jack
- 1/2 cup sour cream
- 2 cups fresh spinach chopped
- 1 small zucchini
- 3 small multi-colored peppers
- 6 mushrooms
- 1/2 cup onion
- 1/2 cup cilantro
- Salt and pepper to taste
Instructions
- Pre-heat the oven to 350°F and spray a muffin tin with non-stick cooking spray.
- Cook the turkey sausage till it's Brown. Chop the vegetables up fairly small. Put it all into a large bowl.
- Add the eggs, sour cream and cheese, then mix it up all together.
- Divide the mixture into a muffin tin that have been sprayed with nonstick cooking spray.
- Place them in a preheated oven and bake for 40 minutes or until golden brown on the top.
