An optional ingredient is glucomannan but it is not necessary. Glucomannan is a dietary fiber that will thicken hot foods. It does not have any starch, sugar, or calories so it is a great alternative to flour if you are on a keto diet or you are trying to avoid simple carbs.
Glucomannan does not thicken cold food very well but when you add it to hot food it does a great job at thickening. A small amount goes a long way though so be careful with measuring it.
You will need to add the glucomannan to some cold liquid first, then stir it into the hot chowder. If you don’t want to use the glucomannan then the clam chowder will still be pretty thick due to the cream.

Keto Clam Chowder- Low-Carb and Gluten-Free
This hearty bowl of clam chowder is loaded with bacon. It uses cauliflower instead of potatoes and it is gluten-free and grain-free.
Ingredients
- 6 slices of bacon, cut into 1-inch pieces
- 1 medium onion, diced
- 2 stalks celery, finely chopped
- 1 (8-ounce) bottle of clam juice
- 3 cups chicken broth
- 1 cauliflower head, cut into bite-size pieces
- 1/2 teaspoon dried dill
- salt and freshly ground black pepper (to taste)
- 8 tablespoons butter
- 2 cups heavy cream
- 16 oz. container of frozen clams, defrosted—undrained
- 1/4 cup finely chopped fresh chives
OPTIONAL THICKENER:
- 1/3 cup cold chicken broth
- 3/4 teaspoon glucomannan
Instructions
- Over medium heat, add the bacon to a large pot and cook until crispy.
- Stir in the onion and celery and cook until the onion is soft. Add the clam juice, chicken broth, and the cauliflower florets. Add the dried dill, salt, and pepper. Bring to a boil then reduce to simmer and cook until the cauliflower is tender about 10 minutes.
- Add the butter and when it has melted stir in the heavy cream and the clams. Simmer on low for about 5 minutes until the clams are cooked.
- Optional: to thicken the clam chowder, combine the glucomannan and cold chicken broth with a whisk then stir it into the hot chowder.
- Ladle the chowder into bowls and garnish with bacon bits and chives
