I love salads but I’m always looking for something different. This arugula salad recipe really hits the spot. Arugula is a green leafy vegetable that has a peppery flavor.  Adding the cherry tomatoes, feta cheese and avocado gives this Arugula salad a nice creamy texture, then drizzling the balsamic glaze over the top just brings it all together.  You have sweet and savory all in one bite.   There is nothing better…

You can use goat cheese instead of the feta, they would both give the arugula salad a real rich pop. Balsamic glaze is thicker than regular balsamic vinegar and has a wonderful sweet flavor.  This arugula salad recipe can be thrown together in nothing flat.  You can put it together at any time of day with no hassle and serve it up to a group with full satisfaction.  It has such a beautiful color and looks like you spent a lot of time on it but it only takes a few minutes. To top it off it’s is very delicious and healthy for you. I could eat this every day.

When your trying to watch your weight this salad is great, you can eat as much as you want. Vegetables are something you want to have at least once a day.  The balsamic glaze does have a few carbs so you don’t want to overdo it, a little goes a long way. 

Nutritional value:

Another name for arugula, is rocket, Italian cress, roquette, and rucolait’s.  It is a Mediterranean green that belongs to the mustard family.  Arugula provides you with essential nutrients, making it a healthy addition to your diet.

  • 2 cups arugula only has 10 calories
  • It’s high in fiber
  • High in nitrates and the antioxidant Alpha lipid acid that have been known to lower glucose levels and lower blood pressure
  • It improves insulin responsiveness, lowers cholesterol and triglycerides
  • Arugula decreases the risks of obesity, diabetes and heart disease

Ingredients needed:

  • Arugula
  • Crumbled feta cheese
  • Avocado
  • Cherry or grape tomatoes
  • Balsamic glaze

This salad would also be great with fruit and nuts like apples, pears or grapes, pecans, walnuts or even almonds.  I have also added prawns, salmon and chicken to the top, making it a complete meal. these proteins complement the salad nicely.   Soooo good

    • Yes as I listed above it is a very healthy green.  It helps with many health factors, with one of the most important ones being diabetes.
  • What is balsamic glaze? 
    • Balsamic glaze is basically a balsamic reduction, which means that balsamic vinegar has been cooked down to evaporate the water off.   The end result is a darker, thicker, and more flavorful version of balsamic vinegar.  I enjoy this so much better than the runnier balsamic vinegar. 
    • It can be used on multiple things, for example on top of meats and cooked vegetables are a couple of my favorites, besides salads.  Give it a try, you can buy it in the grocery store or make your own.

Ingredients

  • 2 cups arugula
  • 12 cherry tomatoes
  • 1/2 avacodo 
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic glaze

Instructions

    Chop the arugula into bite size pieces

    Cut the tomatoes in half

    Chop the avacodo into small chunks

    sprinkle the feta cheese over the top

    Drizzle with balsamic glaze then toss all together
