You can use goat cheese instead of the feta, they would both give the arugula salad a real rich pop. Balsamic glaze is thicker than regular balsamic vinegar and has a wonderful sweet flavor. This arugula salad recipe can be thrown together in nothing flat. You can put it together at any time of day with no hassle and serve it up to a group with full satisfaction. It has such a beautiful color and looks like you spent a lot of time on it but it only takes a few minutes. To top it off it’s is very delicious and healthy for you. I could eat this every day.
When your trying to watch your weight this salad is great, you can eat as much as you want. Vegetables are something you want to have at least once a day. The balsamic glaze does have a few carbs so you don’t want to overdo it, a little goes a long way.

Arugula salad with feta cheese and balsamic glaze
Ingredients
- 2 cups arugula
- 12 cherry tomatoes
- 1/2 avacodo
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic glaze
Instructions
Chop the arugula into bite size pieces
Cut the tomatoes in half
Chop the avacodo into small chunks
sprinkle the feta cheese over the top
Drizzle with balsamic glaze then toss all together
