Hey everyone if you’re like me and enjoy having something sweet after dinner at night, then you need to try this baked sugar-free vanilla custard recipe.
I created this sugar-free vanilla custard recipe because I am always trying to watch my carb intake. This vanilla custard is so fluffy and creamy that it will definitely satisfy your sweet tooth. Adding a couple of raspberries to this baked vanilla custard just enhances the already wonderful desert. If your a diabetic or someone watching your carb intake then this sugar-free custard is a wonderful treat for you.
As we all know watching what we eat is really important especially if you have diabetes, so going sugar-free and low carb is very important. With that being said you don’t have to totally deprive yourself of all good things in life, like deserts. Getting creative you can have things like my sugar-free low carb vanilla custard and not feel guilty.
This is such a quick and simple recipe to make and you don’t need much to make it.
Let’s get started on what you will need:
- Eggs
- Half and Half
- Sugar substitute (I used sweet and low)
- Sugar-free vanilla syrup
- Vanilla extract
- Tapioca
After you get all your ingredients together break the eggs into a medium bowl and mix thoroughly. Then add the half and half, sugar substitute, sugar-free vanilla syrup, vanilla extract and tapioca to the eggs. Then mix it all that together.
Pour the mixture into the ramekins with even amounts till it’s gone and place in a baking dish with about an inch of water in the bottom. This technique is called a water bath. This is used for cooking delicate foods like custards to create a gentle uniform heat around the food to prevent the food from scalding or burning. then bake in a preheated oven for 45 minutes till golden brown. This recipe is not only delicious but beautiful. You can add any kind of fruit to it like peaches, mango, strawberries to add color and taste. There can be so many variations to this custard desert, for example adding lemon zest or a sugar-free Carmel syrup to it would also make it really lovely. Serve this for breakfast with granola and fruit on top of it, dessert or a snack, Its good any time of day. Like I said earlier just get creative.
There you go another healthy diabetic-friendly recipe to try. I really try hard to keep my health in check by starting with the food I eat. If I am going to have carbs I try to eat them in the morning or early afternoon.
I go by a saying no white at night, which to me means no simple carbs in the evenings. Keeping track of your carb intake is time-consuming and frustrating but just remember anything in moderation is ok..

Sugar Free Vanilla Custard
This baked sugar-free vanilla custard is low in carbs and diabetic friendly. It is the perfect ending to your day.
Ingredients
- 5 Eggs
- 4 Cups half and half
- 1/4 cup sugar free vanilla syrup
- 2 teaspoons sugar substitute (I used sweet & Low)
- 1 teaspoons vanilla extract
- a dash of nutmeg or cinnamon
Instructions
- Preheat the oven to 375°F
- Put the eggs in a medium bowl and mix them up well.
- Add the half and half, sugar substitute, vanilla extract and nutmeg then mix well.
- Using a ladle, pour the mixture into six ramekins.
- Place the ramekins in a 9 x 13 baking dish that has about a half-inch of water in the bottom.
- Bake for 45 minutes or until golden brown on top.
- Pull them out of the oven and let cool.
