Caprice Salad with Shrimp

If you like caprice salads then you’re going to really love this one with shrimp on it.  This layered salad is so fresh and flavorful with fresh basil.  The fresh basil on the top is so fragrant and delicious. Of course the shrimp takes this caprice salad to another level.  It’s bright and colorful, the perfected dish for any gathering.

I steamed the shrimp myself but you can buy it in the store already cooked. To cook the shrimp I use a medium saucepan and brought the water to a boil with a dash of salt.

How to select and prepare shrimp:

Fresh shrimp is very sweet and should not have a bad smell.  If it smells fishy or ‘shrimpy’ you will know it isn’t fresh. You also what to make sure that the shrimp is deveined.  The vein is the black strip that runs down the back of the shrimp. 

When cleaning them make sure you cut those veins out.   You definitely want to use fresh basil and any kind of soft mozzarella cheese will work, I don’t have a favorite brand. Also using the balsamic glaze instead of balsamic vinegar. The glaze is thicker and has more consistency to stay on the salad. 

An appetizer, side dish, or main course:

This dish is great as an appetizer, side dish or main course. The shrimp and fresh basil are what really enhance the salad.  It is so beautiful, bright and fresh. If you like shrimp, you will love this Five Starr dish. Shrimp is one of my favorite kinds of seafood and they are so easy to prepare. I always have a bag of raw frozen shrimp in my freezer. I like to buy them when they’re on sale and save them for a later date.  Try to get the shrimp that has 21-26 count in size.

It is so easy to make and it is a fabulous presentation.

Let’s make this caprice salad:

Place a pan of water of the stove top and bring to a boil with a dash of salt.  Add The frozen shrimp and bring to a boil.  The shrimp should turn pink when they are done.  It will take about 10 minutes depending on the size of shrimp you’re using.  

Grab a large tomato and slice it about a quarter inch thick.  Do the same with the mozzarella cheese and place it on top of the tomato.  Next, layer the fresh basil leaf and shrimp.  Last, but not least drizzle the balsamic glaze over the top.  So quick and delicious. 

Yum Yum.  What a great appetizer or meal in itself.  Love it!!!!

Ingredients

  • 1 large tomato
  • 2 slices mozzerela cheese
  • 4 fresh basil leaves
  • 6 large cooked shrimp
  • Balsamic glaze

Instructions

  1. Slice the tomato in 1/4 inch thickness
  2. Slice the mozzarella cheese the same thickness and place on the tomato
  3. Place the fresh basil leaves on top of the cheese
  4. Top off with a layer of the shrimp.
  5. Drizzle with balsamic glaze to your liking.
